Fresh corn’s abundant in later summer, and it’s a perfect time to spice up corn on the cob. We like to grill corn for a change of pace, but you can also add the same spice to boiled, buttered corn if your grill is under repair. Serves 2 to 4 Ingredients 4 Ears of fresh corn, stalks and silk removed 1 Large spoon of Extra virgin olive oil 1 Spoon of Chili powder 1 Small spoon of coriander 1 Pinch of Cayenne pepper Generous pinch of Kosher salt Generous pinch of Black Pepper Prep / Directions: Preheat the grill. In a small bowl, whisk all the spices together with the olive oil. Brush this mixture on each ear of corn and place on edge of the grill where the heat is lowest. Cover the grill and cook for 5 to 6 minutes, rotating the corn so it grills evenly.
